The Total Quality Poultry Manager for Raising Cane’s will monitor the overall quality of chicken from farm to fork. This role will evaluate chicken, at a supplier, distributor and restaurant level, on an individual schedule to insure compliance with product specifications, identify trend in quality, and proactively communicate any anticipated changes in quality to key stakeholders. This position requires strong organization skills, the ability to self-manage, and effective use of time. This position requires up to 75% travel.


Supplier Quality:

  • Utilizes knowledge of poultry industry to maintain and improve quality standards of chicken from farm to fork
  • Review, update, and maintain poultry specifications
  • Measure supplier compliance to quality and food safety standards through regular onsite facility evaluations
  • Measure ongoing compliance to specification adherence through regular scheduled product evaluations
  • Make regular distribution visits to ensure compliance to quality and food safety standards and handling throughout supply chain
  • Collaborate with cross functional R&D Team to develop and implement product/process changes
  • Develop collaborative relationships with poultry suppliers to identify and implement process improvements
  • Maintain qualified supplier database and manage supplier approval process for poultry suppliers
  • Monitor, communicate, and proactively ensure compliance to laws and regulations governing poultry

Restaurant Support:

  • Monitor, review, resolve, and provide disposition for chicken related complaints and incidents
  • Respond to quality feedback from Operators
  • Manage food safety programs, including temperature monitoring, for poultry
  • Partner with operations on enhanced processes for poultry handling


Data Analysis/Reporting:


  • Compiles monthly, quarterly, and annual quality scorecards for poultry suppliers
  • Analyzes Customer feedback to identify quality trends
  • Provide weekly reports of site visits
  • Provide weekly and monthly reports regarding chicken quality to key stakeholders
  • Additional ad hoc quality reports as need arises
  • Manage regular gold standard chicken auditing process



  • Bachelor’s Degree in Poultry Science, Food Science, or other with work experience
  • Broad Restaurant operations experience particularly in a chicken concept, preferred, or willingness to develop through training
  • 4 years+ experience in a Total Quality, or related role within the Restaurant industry highly preferred
  • Proficient in a variety of technology systems, especially Microsoft Office (Word, Excel, PowerPoint, Publisher and Outlook) 
  • Ability to travel up to 75%
